This is literally my favorite recipe for healthy vegan waffles! They’re refined sugar-free, oil-free and made with ingredients that do good for your body, sounds great, doesn’t it?
You can switch up the recipe by adding chocolate chips, blueberries (or whatever you feel like) to the batter.
*Recipe made by the lovely Jade Godderis (@livingaplantifullife on Instagram)
◦ 350 gr oats
◦ 2 bananas
◦ 1 tbsp flax seeds
◦ 2 tsp baking powder
◦ 1 tsp baking soda
◦ 1 tsp apple cider vinegar
◦ 1 + 1/2 tsp arrowroot powder
◦ pinch of cinnamon (optional)
◦ pinch of salt
◦ 900 ml plantmilk (or 400 ml plantmilk + 500 ml water)
Start off by adding all the ingredients to a blender.
Blend everything together until smooth.
Preheat your waffle iron and let the batter rest for a few minutes.
When your waffle iron has the right temperature, pour the mixture into the waffle iron.
If you like to try out new things, you can for example add blueberries or chocolate to the mixture(totally optional)
Make sure you keep the waffle iron closed for 7 minutes.
After +/- minutes, open the waffle iron and place the waffles on a plate.
Serve the waffles with your desired toppings.
◦ fresh berries
◦ sliced bananas
◦ fresh fruit
◦ puffed quinoa
◦ almond / peanut butter
◦ coconut / soy yoghurt
◦ coconut sugar / maple syrup (if you like things sweet :))
◦ fresh mint
◦ shaved dark chocolate
